Onion bhaji (Indian onion fritters)


Gluten free fritters. Sesekali tukar selera dengan menu dari India, snak ringkas di sana. Kalau biasa cucur bawang guna tepung gandum...kali ni guna tepung gram. Masa kawan yg dok kat UK share pasal cucur ni kat fb, tertanya2 jugak tepung gram tu tepung apa, first time dengar....sekali tu google baru la tau pasal tepung ni....dibuat daripada kacang dhal yg kecik2 tu...yg namanya gram...

Tadi singgah ke supermarket, teringat nak mencari tepung gram ni....memang ada jual....kat bahagian tepung2 maruku sume tu..... Akhirnya dapat juga makan onion bhaji....yg resepinya saya cnp dari Allrecipes.co.uk ni sejak sekian lama sebab tepung gram takde....

Easy onion bhaji @ ZLC

Ingredients
Serves: 3

1 large onion, thinly sliced (bawang  kuning hiris nipis)
1 pinch salt (secubit garam)
2 garlic cloves, minced (2 ulaa bawang putih cincang halus)
1 teaspoon turmeric (1sk serbuk kunyit)
2 teaspoons curry powder (2 sk serbuk kari)
a few coriander leaves (sedikit hirisab daun ketumbar)
5 tablespoons gram flour (5 sb tepung gram)
water, as needed (air secukupnya)
oil for frying (minyak untuk mrnggoreng)
salt and ground black pepper (garam dan lada hitam secukup rasa)

Method

Place the onion slices in a bowl, sprinkle with the pinch of salt, and mix well with your hand to separate the slices. Stir in the garlic, turmeric, curry powder, and coriander leaves.
Masukkan bawang ke dalam mangkuk dan taburkkan secubit garam. Gaul rata. Masukkan bawang putih, serbuk kunyit dan kari, serta daun ketumbar.

Stir in the gram flour, and mix by hand. Add water, a little at a time until a soft dough forms. The dough should not be too thick nor too liquid.
Heat the oil in a deep frying pan over high heat. Drop the dough by tablespoons into the hot oil and fry until golden. Remove to a plate lined with kitchen paper. Season with salt and pepper.

Masukkan tepung gram dan gaul dengan tangan. Tambah air sedikit demi sedikit dan gaul hingga mendapat adunan yg lembut, tidak terlalu likat atau cair. Perisakan dengan garam dan lada secukup rasa. (Ikut resepi dia tabur garam dan lada hitam selepas goreng tapi saya gaul dalam adunan tepung). Panaskan minyak dan goreng bhaji(cucur) hingga garing.

Gram flour is a pale yellow flour made from ground chana dahl, a type of small chickpea, and is sometimes called besan flour.
