Arabian Chicken Stew


Menu tambahan iftar 6 @ ar raihan. Stew arab versi saudi dan emirate arab. Sumber resepi saya munatycooking.com. Semalam agak kelam kabut...tak sempat nak platting pun. Stew ni sedap makan dengan roti.

Kat sana stew di kalau bulan ramadhan boleh dikatakan hari2 dihidangkan untuk berbuka puasa bersama juadah lain. Diorg panggil thareed  hidangkan dengan roti rangup nipis  yang dipanggil Reqaq. Resepi stew ni berbeza antara negara/kawasan2 timur tengah. Ikut maklumat sumber resepi saya ni kat kuwait dan bahrain stewnya lebih berempah. Kalau belah2 emirate atau saudi pulak diorg suka letak loomy atau lemon kering.

Arabian Chicken Stew (stew ayam arab)

Serves 5. 375 per serving

450gm skinless chicken thighs
450gm skinless chicken legs
(Or 900gm skinless chicken cut into eight pieces)
900 gm ayam

2 large tomatoes finely chopped
2 biji tomato besar cincang lumat

2 medium zucchini diced
2 biji zucchini - potong kecil

1 large onion finely chopped
1 biji bawang besar cincang halus

1 large potato diced
1 biji tomato besar potong kecil

1 large carrot diced
1 biji lobak merah potong kecil

4 garlic cloves minced
4 ulas bawang putih cincang

3/4 cup chopped coriander leaves
3/4 cawan daun ketumbar hiris halus

2 tablespoons oil
2 sb minyak

2 tablespoons tomato paste
2 sb pes tomato

1 tablespoon coriander powder
1 sb serbuk ketumbar

2 teaspoons cumin powder
2 sk serbuk juntan putih

1/2 teaspoon black pepper powder
1/2 sk serbuk lada hitam

1/2 teaspoon turmeric powder
1/2 sk serbuk kunyit

1/4 teaspoon cardamom powder
1/4 sk serbuk pelaga

1/4 teaspoon cinnamon powder
1/4 sk serbuk kulit kayu manis

Salt to taste
Garam secukup rasa

8 cups boiling water
8 cawan air mendidih

– In a hot pan, add oil and onion, cook until onion turns light brown. Dalam kuali/periuk panaskan minyak.dan tumis bawang hingga keperangan.

– Add the chicken and cook on medium heat until you see light brown patches on both sides of chicken. Masukkan.ayam dan masak dengan api sederhana hingga ayam keperangan di kedua2 bahagian.

– Add the potatoes and carrot and stir for three minutes. Masukkan kentang dan lobak. Kacau selama 3 minit.

– Add the tomatoes, stir for three minutes, then cover the pan, and let it cook on medium heat for 5 to 7 minutes. (Do check on it so it doesn’t burn since the heat of different stoves varies and my medium heat might be high on your stove.) Masukkan tomato, kacau selama 3 minit lagi. Tutup kuali/periuk dan biarkan selama 5-7 minit. ( sesekali jengok la dalam kuali tu, takut hangit pulak yer sbb kita belum masukkan air).

– Add the garlic and spices and stir to combines. Masukkan bawang putih dan rempah2 lain dan kacau rata.

– Add the zucchini and tomato paste and stir for two minutes. Masukkan zucchini dan pes tomato dan kacau lagi selama 2 minit.

– Now is the time to season with salt, then Add the boiling water and let the stew cook for 45 – 50 minutes or until the chicken is cooked. Perisakan dengan garam dan tuang air. Biarkan sampai ayam betul2 masak dan kentang dan lobak tadi lembut.

– Add the coriander and stir for three minutes.
Tambah daun letumbar dan kacau 3 minit.

– Serve hot.Hidangkan panas2.
