Sotong Kari Kapitan

Masa tercari2 masakan apa nak dibuat ngan sotong selain sambal tumis dan celup tepung terjumpa resepi amy beh ni kat my kuali....cam best jer...bhn 2 pun semua ada...

Ingredients

1 kg small-medium squids (sotong) (sekg sotong - Bersihkan....buang dakwat dan potong ikut citarasa)
3 tbsp oil (3 sb minyak masak)
2 onions, diced (2 biji bawang besar - cincang)
3 stalks lemon grass, smashed (3 batang serai - ketuk)
1 grated coconut; squeeze out 150ml thick coconut milk, then add two cups water and squeeze out thin coconut milk (1 biji kelapa parut - perah untuk dapatkan 150 ml santan pekat dan 2 cawan santan cair)
3 kaffir lime leaves (3 helai daun limau purut)
Juice of 1 lime (Jus dari sebiji limau nipis)

Grind together: (kisar)

13 fresh red chillies (remove seeds) (13 biji cili merah)
13 shallots (13 biji bawang merah)
3 cloves garlic (3 ulas bawang putih)
2cm turmeric root  (2 inci kunyit hidup)
8 candlenuts (8 biji buah keras)
1 tsp belacan granules (1 sb serbuk belacan)

Seasoning:

1 tsp salt, or to taste (garam secukup rasa)
1/2 tsp sugar, or to taste (gula secukup rasa)

Method

Wash squids, remove entrails and black ink pouch. Keep whole and leave the eyes intact. Rub with salt and leave aside for 10 to 15 minutes. (bersihkan sotong, buang dakwatnya. Resepi asal tak potong sotong, saya potong buat bentuk bunga)

Heat oil in a wok, then fry ground ingredients and lemon grass till fragrant. Add onions and saute well. Add a little of the thick coconut milk to prevent ingredients from sticking to the wok. (Panaskan minyak dan tumis bahan kisar dan serai hingga naik bau. Masukkan bawang besar dan tumis lagi. Masukkan sedikit santan pekat untuk mengelakkan bahan tumis melekat di kuali.)


Add squids and fry for a few minutes. Pour in thin coconut milk and cook over low heat until squids are tender. Add remaining thick coconut milk and bring to a low boil. Add lime juice, seasoning and kaffir lime leaves. Dish out and serve immediately. (Masukkan sotong dan tumis untuk beberapa minit. Masukkan santan cair dan masak guna api perlahan sampai sotong empuk. Tambah santan pekat dan biarkan mendidih. Masukkan jus limau, garam, gula dan daun limau purut, kacau sebati. Tutup api dan hidangkan)
